Where 137 g comes from
USDA FoodData Central: 1 cup of “Wheat flour, white, bread, enriched” = 137 g. FDC 168896
King Arthur Baking ingredient weight chart (“Bread Flour”): 120 g per cup. Chart
This page uses 137 g (USDA). The two sources differ by 17 g (12.4%): that gap is about how firmly the cup is filled, not an error in either.
Bread flour has more protein than all-purpose, and USDA's cup of it is heavier at 137 g. King Arthur measures its own bread flour at 120 g, the same as its all-purpose. If a bread recipe gives grams, use them: dough hydration is sensitive to a 15 g difference.
How to measure bread flour by the cup
Stir it to loosen, spoon it into a dry measuring cup until heaped, then sweep the top level with the back of a knife. Do not tap or press the cup.
In the UK and Australia: strong white flour. Metric cups there hold 250 ml, so a metric cup of bread flour weighs about 145 g.
